"Basics of Developmentally Appropriate Practice: An Introduction fo Teachers of Children 3 to 6" by Carol Copple and Sue Bredekamp. A great, easy-to-read book that covers the fundamental concepts and practices that every new preschool teacher needs to understand and use.
"A Mind in the Making: the Seven Essential Life Skills Every Child Needs" by Ellen Galinsky. The title says it all.

The list above is excellent, especially Jim Greenman's Caring Spaces, Learning Places and anything else he wrote. He is still missed so much. One of the books I have recommended over and over to ECE teachers and teacher educators is "Dibs: In Search of Self-Personality Development in Play Therapy" by Virginia M. Axline (Houghton Mifflin, 1964). I have re-read it many times. It is the case history of play therapy sessions with a little boy by a child psychologist. It offers many insights to a child's growing awareness of self, the language he uses, and how he relates to others. At the end of the book, 2 1/2 years after the therapy ended, Dr. Axline, called Miss A, and Dibs meet on the street. They become reacquainted and then Dibs says (recalling his therapy sessions): "You said to me, 'This is your room, Dibs. Have fun....' And I did have fun. I had the most wonderful time in my life. I built my world with you in the playroom. Remember?" This should be every early educator's goal: to provide an environment in which every child can build his/her world.

The Goodness of Rain by Ann Pelo. I'm in the middle of reading it right now. She so speaks about paying attention to the little things, slowing down and the real beauty of spending time with young children. Such a blessing in our hurry-up world.

The Intentional Teacher by Ann Epstein This book is required reading for my staff because it explains how to be with children in a natural, and engaging way.
Natural Playscapes by Rusty Keeler This book gives great inspiration for wonderful outdoor play spaces.
Designs for Living and Learning by Deb Curtis and Margie Carter This book covers indoor spaces beautifully.
Working in the Reggio Way by Julianne P. Wurm This book gives a good introduction to Reggio inspired schools in the United States. It is a good book to read before The Hundred Languages of Children by Carolyn Edwards, Lella Gandini, and George Foreman which is a very in depth study of the philosophy of the preprimary schools in Reggio Emilia Italy.
